Aubergine, Chard and Potato Curry

Ingredients:
- Ingredients - 500g aubergines, chopped into small cubes - 500g potatoes, peeled and chopped into small cubes - 400g chopped tinned tomatoes - 1 tbsp butter/oil - 1 tsp mustard seeds - 1 tsp salt - 3 cloves garlic, peeled & minced - 3cm cube piece ginger, peeled & grated - 1 tsp turmeric - 2 tsp chilli powder - 2 tsp garam masala - 100g chard, separate the leaves and stems and cut both into 1inch chunks 
Method:
- Warm a saute pan and add the mustard seeds - they’ll pop like popcorn! 
- Add a little butter/oil and add the ginger, garlic, turmeric, & chilli powder, garam masala and salt and cook on a low heat for a few minutes. 
- Add more butter/oil and add the aubergine and potato, mixing in to coat them in all the spices. 
- Add the tomatoes and chard stalks and simmer for 40 mins. 
- Stir in the chard leaves, stir, and cook for a further few minutes.
