Salsa

Ingredients:
- 400g fresh tomatoes 
- 1 onion 
- 2 jalapeños/chillis 
- 1 clove of garlic 
- A splash of lime or lemon juice 
- Coriander 
- Salt 
Method:
- Dice the tomatoes and garlic and finely as you can and add them to a large bowl. If using large tomatoes you will want to remove the core. 
- Crush a clove of garlic into the bowl. 
- Decide how spicy you want your salsa and again very finely chop the chillis. Add them to the bowl. 
- Chop some fresh coriander, add to the bowl. 
- Season with a splash of lime or lemon juice and some salt. 
- Mix everything together. This can be enjoyed fresh or stored in the fridge in a tub for a couple of days. It goes really well with other Mexican foods such as burritos, rice and beans, tortillas, etc. It also livens up salads and omelettes as a side.
